Still playing the waiting game...

So, from my last post I stated, we are in the process of building a house, and we receive weekly updates letting us know of the status of the construction loan...Last Friday as I was impatiently patiently waiting to receive that oh so wonderful email from Ms. Lindsey, it never came.. Nooooo, she must not be aware that I look forward to our weekly chats about the pre-construction stuff.. On a happier note, my mom is actually building behind us a few houses down (future free babysitter ) and her loan closed the other day and they have already turned the dirt as well as prepped for the slab (by the time this is posted the slab should be down). 

 

Also we drove by to see if a sign had been placed in the yard and O to the M to the G... they have finally PLACED a sign.

 

 

 

 

 

On another note this past weekend we went to this local "biker bar" type place called Slidder Inn, which happens to be one of our favorite local places which serves a little of everything from vegan/vegetarian friendly to complete cow lovers:)

Update!

Hey lovelies! So its been an entire week or two since I have updated this lovely blog! Last Wednesday, I had the worst migraine of my life that lasted almost an entire week that had gotten so out of control, I had to visit my primary doctor in order to get prescribed migraine medicine..NO BUENO..

Last Friday (11th), I also heard from the construction company that's building our first home letting us know they are still waiting to close the construction loan with the bank (previously I was told it normally takes between 2-4 weeks). This week will be the end of two weeks so hopefully we will here something, fingers crossed.

Saturday (12th), we drove to Jackson to visit Steve's side of the family, it's been a good minute since I had last seen his dad , so it was rather nice playing catch up. We ended up staying until 9 that night before heading back... All in all last weekend was rather busy for me.

S/N: Spring semester is almost over, THANK YOU BABY J... I have one exam left in Microeconomics and a few other things to complete for my Biology 2 class and then I will be free for the next few months!

Pico De Gallo - Chunky Guacamole (Las Delicious style)

Pico De Gallo - Chunky Guacamole

Ingredients needed:

Cilantro - handful

1 small/medium Tomato

1 Jalapeno pepper (for heat)

1 Avocado

1 small Onion (I prefer Vidalia onion)

1 Lemon (fressly juiced if possible)

Salt to taste
pepper to taste
garlic (minced/powder) to taste

**dice all ingredients**

In a medium bowl, combine cilantro, tomato, jalapeno pepper, onion. In a separate bowl squeeze the lemon juice on the avocado in order to keep it fresh (turning brown). Combine the avocado with the other ingredients and lightly toss. Add Salt/garlic/pepper to taste and WHAALLAA you have yourself some delicious Pico De Gallo or chunky Guacamole!... ENJOY!

Best to refrigerate for at least 30 minutes.

I personally enjoy this as a dip or placed as garnishment for any entree. (view pictures below).

CATCH UP TIME!

Hey there, its been WAY too long since I have been on here! What excuse do I have other than instead of keeping up with my own blog, I simply decided to stalk read everyone else's blogs and I apologize:)!? To begin with where I last left off, which I am a little embarrassed to admit was a little over two years ago..WOW! Lets begin I discovered an individual in one of the "Just Busted" issues that I not only recognized, but I actually knew pretty well. Well I'm happy to announce that the entire situation was a fluke and long story short he was found NOT guilty which is a good thing!

- On another note -

The last two years have absolutely flown by like crazy, I'm not sure where I should actually begin! I am still in school for my Bachelors for Accounting and I definitely have a love/hate relationship, but hey who doesn't right!? Secondly, I am officially engaged woot woot! Now if I can only sit down and plan the wedding (while I don't wont some extravagant wedding, I'd honestly be happy with a eloped wedding, BUT a NICE honeymoon, I guess we will see). Finally on top of the pressure of planning a wedding we decided to go ahead and build a house as if we weren't already busy enough! AYE YE YE..

Shocked!

Wow! Here where I live, we have a "newspaper" type thing that is distributed throughout the city at different businesses that displays people as "Justbusted." I suppose the reasoning behind this, is to let everyone know who has been arrested and the crime behind the arrest.... Usually I buy them for shits and giggles, and just MAYBE I'll see someone I know or recognize... There have definitely been times that I have recognized someone, whether it is a customer, or someone I graduated with or know through someone else.... BUT this week while at Walgreens I decided to pick up an issue, and long and behold I see 2 ppl I recognize ( 1 a girl from Hs who looks terrible, who is now on drugs, and the other, which is a guy whom I've actually hung out with and have had hours of conversion with..) Under his mug shot picture, the crime stated sexually battery and rape of a child! I was completely caught off guard and beyond shocked! This man has two children of his own and has his own business! If convicted he has completely ruined his own life, but possibly his kids childhoods.. He will never be able to pick his kids up from school, continue to teach soccer, be in a close proximity of any underage child and forever will have to register as a sex offender.... On another hand, while I definitely don't defend his actions I wonder if whomever his victim is had a "fake id" or just didn't look her age... Either way I feel for his children and family:(..This one incident may have just cost him his life and "freedom" Do you all know anyone, who has been caught up in the law?

Oh man, where do I start! The past two weeks have been EXTREMELY busy for me with school..

Friday Night:
We all went to dinner to jump start my three day weekend! Gotta love bankers holidays:). This was my entree, and OMG it was fab!

 Now! I must say I LOVE food, and this meal almost gave me a foodasm. The meat literally falls off the bone.... I'm sure you all already know, but if you don't I'm from Memphis - "HOME OF BBQ," and boy oh boy if any of yall ever decide to make a pit stop in the M, you must go to "Beale Street," and stop in @ a little place called "Blue City Cafe"... I PROMISE YOU WONT BE DISAPPOINTED! :)
